Heavenly Buttermilk Pancakes

I usually make these Heavenly Buttermilk Pancakes quite often, especially in the summer. They are so good. My family enjoys them as much as I do. This is a really easy recipe, yet so delish. It's also a family recipe.




Ingredients for Pancakes:

                                                  2 C. Flour
                                                  2 T. Sugar
                                                  1 T. Baking Powder
                                                  1/2 t. Salt
                                                  1/4 C. Oil
                                                  2 Eggs
                                                   2 C. Buttermilk



                                                              Instructions:

1. Put the Flour, Sugar, Baking Powder and Salt in a large mixing bowl and whisk together, until well combined.
2. Then in another smaller bowl put the Oil, Eggs and Buttermilk and whisk together until well combined.
3. Next put the wet ingredients in the dry ingredients bowl, mix it with a fork. Do not mix it alot. The reason is, the more you mix it the less fluffy the Pancakes are going to be. We want the Pancakes to be as fluffy as possible, but still mixed.
4. Get a quarter measuring cup and scoop the batter out ( using the quarter cup) onto a griddle. When you start to see bubbles on the pancake, flip it.
5. Add any topping you desire.
6. Enjoy!!!!!!!!






Scrumptious Strawberry Cake with Whip Cream


I have never made Strawberry Cake or tasted it. I thought I should try making something new and exciting. My Aunt said she has had Strawberry Cake before and loved it, so I tried it. It was yyyyyuuuummmmmmmmyyyy!! My family thought so too. It is a truly scrumptious dessert.










                                         Ingredients you will need:

                             3 C. Flour
                             2 C. Sugar
                             1 1/2 T. Baking Powder
                             3/4 t. Salt
                             3/4 C. Vegetable Oil
                             1 1/2 C. Strawberry Puree
                             1 t. Vanilla
                             1 t. Lemon Juice
                             4 Eggs, beaten
                             Red or Pink food coloring, if desired
               
                                         Ingredients for Whipped Cream frosting:

                             3 C. Heavy Whipping Cream
                             1/4 C. Powdered Sugar
                             3 Heaping teaspoons of Cream Cheese
                             1 t. Vanilla


                                          Instruction:

1. Preheatoven to 325 degrees.
2. Grease and flour 3 8" round cake pans. You want to use 2 pans and then reuse 1 of the pans.
3. In a large mixing bowl, mix together the Flour, Sugar, Baking Powder, and Salt.
4. Add the Vegetable Oil, Strawberry Puree, Vanilla, and Lemon Juice to the dry ingredients and mix until well combined.
5. Next, add the Eggs and Food Coloring, if using, and whisk until smooth.
6. Divide the batter evenly among the pans.
7. Bake for 35 minutes and let it cool for 10-15 minutes before taking the cakes out of the pans. then put a layer of cake on a cake stand.
8. For the frosting, blend together the Cream Cheese, Powdered Sugar and Vanilla together. Then whip the Whip Cream and once whipped add the Cream Cheese mixture into the Whip Cream and whip it some more.
9. Put a spoonful of Whip Cream frosting on the first layer of cake and spread it out to the edges of the cake. Then put on the next layer of cake on, and put a spoonful of Whip Cream frosting on the second layer of cake.
10. Put the third layer on.
11. Put the rest of the frosting in a piping tube and make swirls along the edges of the top layer of cake.
12. Chill

Mom's Birthday Cake

My mom's favorite cake is carrot cake with cream cheese frosting. Today we celebrated her birthday, and even though I don't personally like carrot cake, I love her so I made it for her. I made the 3-layer cake and frosting all by myself, and decorated it with the help of my aunt. I used a cake decorating tip to finish it, and I like making it look really pretty when it's all decorated. I put candles on top in the shape of 40, cuz that's how old my mom is.
